Chicken Salad

I think this would be a great alternative to the same old lunch meat sandwiches. I got the recipe from a group that i belong to.

2 tablespoons fresh lemon juice

1/2 cup mayonnaise

1 teaspoon salt

1 teaspoon pepper

3 1/2 cups finely diced cooked chicken

1 cup finely diced celery

1/3 cup slivered almonds


In a small bowl, combine the lemon juice, mayonnaise and salt. Toss with the chicken, celery, and almonds in a medium bowl. Serve on crackers or rolls of your choice. You could also make it low fat by using low fat mayo in place of regular.
