Black bean chicken and rice

Rice

1/2 cup fresh lime juice (or bottled is good too)

2 tablespoons oil

2 teaspoons honey

1 garlic clove, minced

1/2 jalapeno pepper, seeded and chopped

Salt and pepper

1 can black beans, drained and rinsed

½ cup chopped green onions

1/2 of a red pepper chopped

¼ cup chopped fresh cilantro or parsley

3 tablespoons Worcestershire sauce

1-1/2 teaspoon hot pepper sauce

2 chicken breasts, chopped

Fresh sliced limes

Cook rice following package directions. Whisk lime juice, oil, honey, garlic and jalepeno together; season with salt and pepper. Add beans, green onions, red peppers and half of cilantro. Stir into hot rice, cover and set aside.

Fry up chicken with the hot sauce and Worcestershire sauce. Then add to the rice. Serve warm.
