Prairie pork chops

With fall approaching this meal is a perfect comfort food dinner on a chilly night.

8 pork chops
1/2 cup spicy mustard
1/2 cup packed brown sugar
1 box Stove Top stuffing
1 can corn, drained
1 cup water


Spray 9x13 baking dish with non stick spray. In a shallow bowl, mix brown sugar and mustard. One by one, coat each side of pork chops with mustard mixture. Top chops with any remaining mixture (you'll want every last bit of this stuff, trust me!) In a medium sized bowl, mix stuffing, corn, and water. Top pork chops with stuffing mixture. Bake at 350 for 40-45 minutes.

Pumpkin Chiffon Pie

I was watching Paulas best dishes on food network and they made this pis.It looked so good and it was simple to make. I will be making this for thanksgiving this year!

* 1 (9-inch) frozen deep-dish pie crust
* 32 jumbo marshmallows
* 1 cup pumpkin puree
* 1/2 teaspoon pumpkin pie spice
* 1/4 teaspoon salt
* 12-ounce container whipped topping
* Cinnamon, garnish

Directions

Bake the pie crust according to the package directions and allow it to cool.

In the top of a double boiler over low heat, combine the marshmallows and the pumpkin puree. , Stir constantly, with a heatproof spatula, until the marshmallows are melted. Take the pan off the heat and stir in the spice and salt.

When the mixture is completely cool, stir in half of the whipped topping. Pour the filling into the prepared pie crust. Top with the remaining whipped topping and garnish with cinnamon.

Cranberry cream cheese spread

With the holiday season fast approaching i am going to be posting some seasonal recipes.I cam across this dip over @ the real mom kitchen. I cannot wait to make this for a thanksgiving appetizer .

* 1 package (8 ounces) reduced-fat cream cheese
* 1/2 cup dried cranberries, chopped
* 1/2 cup chopped dried apricots
* 1 teaspoon grated orange peel
* Assorted crackers

In a large bowl, mix the cream cheese, cranberries, apricots and orange peel until blended. Chill until serving. Serve with crackers. Yield: 1-1/2 cups.

Warm caramel apple cake

Seen this great recipe over at betty crocker and i cannot wait to make it. It is the perfect fall cake to make for a get together or just a yummy treat.


Cake
1/2 cup butter or margarine
1/4 cup whipping cream
1 cup packed brown sugar
1/2 cup chopped pecans
2 large cooking apples, peeled, cored and thinly sliced (about 2 1/3 cups)
1 box Betty Crocker® SuperMoist® yellow cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1/4 teaspoon apple pie spice
Topping
2/3 cup Betty Crocker® Whipped fluffy white frosting (from 12-oz container)
1/2 cup frozen (thawed) whipped topping
Caramel topping, if desired

1. Heat oven to 350°F. In 1-quart heavy saucepan, cook butter, whipping cream and brown sugar over low heat, stirring occasionally, just until butter is melted. Pour into 13x9-inch pan. Sprinkle with pecans; top with sliced apples.
2. In large bowl, beat cake mix, water, oil, eggs and apple pie spice with electric mixer on low speed until moistened. Beat on medium speed 2 minutes. Carefully spoon batter over apple mixture.
3. Bake 40 to 45 minutes or until toothpick inserted near center comes out clean. Cool in pan 10 minutes. Loosen sides of cake from pan. Place heatproof serving platter upside down on pan; carefully turn platter and pan over. Let pan remain over cake about 1 minute so caramel can drizzle over cake. Remove pan.
4. In small bowl, mix frosting and whipped topping. Serve warm cake topped with frosting mixture and drizzled with caramel topping.

Note * Granny smith and braeburn apples work best

Homemade Chunky Applesauce

I love to go apple picking in the fall and one thing i always like to make is homemade applesauce.

* 3 cups chopped peeled tart apples (about 1 pound)
* 3 tablespoons brown sugar
* 3/4 teaspoon vanilla extract
* 1/4 teaspoon ground cinnamon

Directions

* In a small saucepan, combine all ingredients. Cover and cook over medium-low heat for 30-40 minutes or until apples are tender, stirring occasionally.
* Remove from the heat; mash until sauce reaches desired consistency. Serve warm or chilled. Yield: 2 servings.

Pumpkin cream cheese pie

I am not a fan of plain ol pumpkin pie so this pie is a great alternative for me.

Graham Cracker Crust:

* 1 cup Graham Cracker Crumbs
* 1/4 cup Butter or Margarine

Pumpkin Cream Cheese Filling:

* 8 ounces Canned Pumpkin or Pumpkin Puree
* 12 ounces packaged Cream Cheese
* 2 Eggs
* 2 Egg Yolks
* 3/4 cups Sugar
* 1 1/2 tablespoons Flour
* 3/4 teaspoons grated Lemon Peel
* 3/4 teaspoons grated Orange Peel
* 1/2 teaspoon Vanilla Extract

Sour Cream Topping:

1 1/2 cups Sour Cream

2 tablespoons Sugar

1/2 teaspoon Vanilla Extract

Preparation Directions:

1. Melt butter.
2. In a bowl, use a fork to mix together graham cracker crumbs and butter.
3. Form graham cracker crust, using the back of a tablespoon to press the mixture into a 9 inch pie plate.
4. Pre-heat oven to 350 degrees.
5. Prepare Pumpkin Cream Cheese Filling- Combine all filling ingredients (see above) into a mixing bowl. Mix at medium speed until well blended and smooth.
6. Pour filling mixture into pie crust.
7. Bake 35 - 40 minutes, or until pie is firm.
8. Sour Cream Topping- Combine ingredients (see above) and mix well.
9. Spread topping over pie.
10. Bake an additional 10 minutes.
11. Let pie cool. Then, refrigerate overnight.

Apple crisp

Nothing says fall like a warm piece of apple crisp topped with vanilla ice cream.

* 5 medium tart apples, peeled, cored, and sliced
* 1/3 cup firmly packed light brown sugar
* 1/3 cup granulated sugar
* 1/2 cup all-purpose flour
* 3/4 cup quick cooking oats
* 1/2 cup melted butter
* 1/3 cup water
* whipped cream or vanilla ice cream

Preparation:
Arrange sliced apples in a buttered 8-inch square baking dish. In a bowl, combine the sugars, flour, and oats; stir in melted butter. Spread mixture over the apples. Pour water evenly over top. Bake in a 375° oven for 30 minutes, until apples are tender and top is nicely browned. Serve warm or cooled with ice cream or whipped cream.
Serves 4.

Caramel Apple Dip

This dip is so tasty and it is quick and easy to make. So this is the perfect dish to bring to a fall gathering or anytime.

1 pkg cream cheese 8 oz ,softened
1/2 cup caramel ice cream topping
1/4 cup honey
1/4 tsp cinnamon
red and green apples sliced and cored

In a medium mixing bowl combine cream cheese,caramel,honey and cinnamon. Beat until smooth and store in fridge until ready to serve.

*To prevent the apples from browning to quick i always put a little 7-up on them. Sprite or any other lemon lime soda will do the trick

Apple-cranberry sparkler

This is the perfect fall drink. Even though it is a chilled drink it hits the spot on a nice fall day.

4 teabags
2 cups boiling water
1 cup cranberry juice cocktail chilled
1 cup apple juice chilled
2 tsp sugar

Place the tea bags in boiling water and brew for 5 mins;remove teabags. Combine tea,juices and sugar in a pitcher and chill.

Not your average snack mix

This is just a base recipe for a snack mix. You can use anything you want to make it to your liking but this is what i use.

1 sm box chex cereal - I use the rice chex
1 sm package goldfish crackers - I use the parmesan ones
1 16 oz bag mini twist pretzels
1 sm box cheese filled mini ritz crackers
1 16 oz pkg peanuts
1 12 oz bottle butter flavored popcorn oil
1 pkg ranch dressing mix

Combine the cereal,peanuts,pretzels and crackers in a lg bow. Combine oil and ranch mix and stir well.Pour over cereal mixture and toss to coat well. Store in an airtight container

Chilly night white hot chocolate

This is perfect for those chilly fall and winter days or nights. This recipe makes 8 cups so you will want to have people to share it with .

12 oz bar white chocolate finely chopped
6 cups milk - I use 2% ( Skim will not work )
2 c whipping cream
1 tsp vanilla extract
Garnish - Milk chocolate shavings

Place white chocolate in a medium bowl set aside. combine milk and cream in a sauce pan;heat over medium heat until bubbles begin to form around edges about 4 mins. DO NOT BOIL. Pour over white chocolate gently stir to combine. Whisk in vanilla. Pour into mugs and sprinkle with chocolate shavings

Holiday Apple and Cranberry casserole

This makes a really good side dish to any holiday meal.

3 cups apples unpeeled and diced - use hard or tart apples
2 c cranberries
1 c sugar
1 c quick cooking oats uncooked
1 c chopped pecans
1/2 c packed brown sugar
butter

Place the apples,cranberries and sugar in the bottom of a 13x9 well buttered casserole dish. Mix together the oats,pecans, and brown sugar. Sprinkle over the top of the fruit. Dot the entire top with butter and bake at 325 for 1 hr

farmhouse punch

This is a very simple and yummy punch for any occasion.

46 oz can apple juice
46 oz can pineapple juice
12 oz can frozen orange juice concentrate thawed
2 qts ginger ale

Combine the 3 juices together in a punch bowl and mix well. Add ginger ale stir to mix.

Winter spiced cider

This is the perfect drink for those cold winter or fall days.

3/4 cup brown sugar packed
1/2 cup vanilla ice cream softened
2 Tbs butter softened
1 tsp cinnamon
1 1/2 gallons of apple cider
garnish- cool whip and cinnamon

Combine the 1st 4 ingredients together in a blender. blend until smooth . Pour into freezer safe dish. Cover and freeze 2 hours. Heat apple cider thoroughly in a lg saucepan. Pour into serving mugs. add 1 tbs frozen mixture to each mug. Stir until melted.Garnish with a dollop of cool whip and sprinkle of cinnamon
