chili cheese enchiladas





I have always liked taco bells chili cheese burritos so i decided to make my version of them at home.I decided to make them into enchiladas instead of a burrito.It is a nice quick and easy meal.

10 corn tortillas
1 can chili with no beans - I use hormel
1 bag shredded cheese - i use mexican blend
1/2 cup diced green onions -if desired
1 sm can sliced olives

Stack your corn tortillas on a microwave safe plate. Cover with a paper towel and microwave for 15 seconds . This makes them easier to work with.In a small saucepan heat up the chili so it is easy to pour over enchildas.Place tortillas on a cutting board one at a time and fill with a handful of cheese,green onions and olives.Repeat process until you fill all the tortillas. Be careful not to over stuff them else they will be hard to roll.Place finished tortillas in a lightly greases 9x13 pan. Spread chili evenly over rolled tortillas.Top with more cheese and bake until bubbly and brown. Bake at 375 for about 20 mins. Top each enchilada with sour cream if desired.
