Chicken Scampi

This is a great alternative to the classic shrimp scampi. I do not like seafood so this is my kind of scampi =)

1/2 c butter
1/4 c good olive oil
2 tsp italian seasoning
3 cloves minced garlic
1 tbls lemon juice
4 boneless chicken breasts cut into 3rds
3/4 tsp salt
1 pkg linguine or noodle of your choice.
In a skillet heat the butter and oil over med-high heat. After butter is melted add seasonings and garlic. Add the chicken and saute 3 mins. Lower the heat and cook another 10-15 mins. More butter can be added if needed. Serve over hot linguine or spaghetti noodles
